Why a dinner at the villa beats a table in town
A dinner at the villa keeps the group around one table and removes the logistics of restaurant transport, parking and different return times. Roberto plans the journey from Siena using the exact address; Florence, Fiesole, Bagno a Ripoli, Impruneta, San Casciano and the Chianti Fiorentino are commonly within the included area, subject to the published travel rule.

The kind of house we cook in around Florence
Villas on the Florentine hills often have kitchens redone for the rental market: a hob that works, a real oven, and room to plate three or four courses without moving anything twice. There are also converted convents and fattorie, where the kitchen is handsome but the extraction is limited, and apartments inside town palazzi, where the dinner works but the arrival needs planning. It varies by property, so we ask for photographs of the kitchen before confirming in all three cases.
For a dinner the questions are different from the ones a class asks. The first is where the food comes out: on these hills the table is very often on a terrace or under a loggia, a floor down or a door along from the kitchen, and that walk gets planned rather than improvised: it decides which courses are plated inside and which are finished beside you. The second is extraction, which in a converted convent or fattoria is usually the weakest thing in an otherwise handsome room: a menu with a seared course is planned around an open door. Neither is an obstacle. Both are asked before anything is confirmed.

What we cook when we cook near Florence
The dinner follows the menu you selected, with seasonal shopping chosen for freshness. Around Florence that may include Tuscan bread, local olive oil, pork or beef, and dishes such as guancia di vitellone brasata al Chianti, beef cheek braised slowly in Chianti. Availability is confirmed through the actual shopping rather than promised in advance.
A few addresses, offered as addresses and not as a supplier list. Sant’Ambrogio is the other covered market, open since 1873 and on the opposite side of the centre from San Lorenzo: it is the one the city uses on a Tuesday morning rather than the one the guidebooks point at, and Macelleria Menoni has had a counter in it since 1921. For bread, Forno Palatresi in Borgo Ognissanti has worked with natural leaven since 1957, which is the difference you taste in a loaf made without salt. Worth a visit of your own while you are in the city.

Good food and very nice people. Not gourmet food but decent and nice tasting. I Would recommend. Only thing missing was probably a representation of the food. Overall a very good experience
